Building Sustainable Menus: Farming and Living in a Green World
We are excited to welcome speakers from two of the big Milwaukee names in organic food and sustainability. James Godsil from Sweetwater (www.sweetwater-organic.com) and David Swanson of Braise (www.braiseculinaryschool.com) will be with us to discuss organic food by defining the genre, exploring the history of and presenting the importance in today's food industry and how this affects restaurants, events and menu planning.
This month’s featured food and beverage hosts are Bartenders on the Go and Jake’s Catering. Our signature cocktails will be organic lime and cucumber mojitos and organic agave margarita. Wine, beer and soda will also be available.
Our dinner will consist of spring asparagus and petite greens salad with balsamic truffle vinaigrette; Strauss free raised veal with morel mushrooms, fiddlehead ferns, natural jus; and, a strolling dessert station featuring buttermilk and vanilla pannacotta, seasonal fruits, house made dried fruit chutneys, and pistachio brittle.

About the Venue: Sharon Lynn Wilson Center
The Sharon Lynn Wilson Center is a beautiful performing and visual arts and education facility nestled in Brookfield's Mitchell Park. Located just 20 minutes west of downtown Milwaukee, the Wilson Center serves as a bridge for the arts by connecting communities, linking arts organizations, and fostering a collaborative spirit that helps keep the arts alive.
